Barbecue X barbecue

The Americans have various types of barbecue, depending on the occasion, each with different cuts of meat. Who has never seen, at least in Hollywood movies, the families barbecuing meat in the backyard? This barbecue is usually done with burgers, sausages and sausages of type frankfurt, which are seasoned, smoked and pre-cooked.

The term barbecue, which became popular in the world to indicate the American barbecue is actually just a typology. “The barbecue (BBQ), contrary to what many think, is not synonymous with American barbecue. It’s just your older mode, “said Frenkel. There are records that indicate that the acronym BBQ means barbe à queue, or “the beard to tail”, alluding to the way that the slaves in Central America they roasted whole animals.

There are, however, other versions of the word. One of them connects the name to the Spanish term barbacoa, which means frame used to store meat it would be dry or smoked in the future.

The barbecue is prepared with less noble meats that are on fire for a long time, up to 12 hours, to get a very soft texture, falling apart in your mouth. To ensure the flavor, the meat is watered with lots of sauce before, during and after the preparation. The cut used in this case are the pork and beef ribs, chest and sobrepaleta and also the whole hog.

The opposite of barbecue is the noble meat barbecue. That if you find the Steak Houses, houses that specialize in serving barbecue cuts that require fast cooking. Stand out among them the t-bone (the middle part of the ribs, with mignon and Tenderloin), prime rib (first rib with ox Sirloin steak) and tomahawk (cut like the prime rib, but with a larger bone, which measures approximately 30 cm).

As spice

In the United States, the Dry Rub is considered a traditional barbecue seasoning. The mixture takes refined sugar, brown sugar, salt, sweet and spicy paprika, onion powder, garlic powder and pepper and serves to give flavor to the beef and pork. In General, there is no need to season the food in advance, with the exception of swine, which must rest ribs in the sauce overnight.

In Steak Houses and backyard barbecues, where cuts are prepared more noble, the pieces are seasoned only with salt, butter, branches of thyme and cloves of garlic, not to alter the flavor of the meat.

Side dishes

The corn on the cob (grilled corn), cole slaw (cabbage salad with vinhagrete) and the baked potatoes (baked potatoes) are the more traditional accompaniments. /Photo: Disclosure.

Unlike the Brazilian customs, at barbecues of the United States the number of side dishes is a lot smaller and the recipes vary widely. The most common are: corn on the cob (corn on the COB), baked potatoes (baked potatoes) and cole slaw (cabbage salad with vinaigrette dressing).

Specialized restaurants and in Steak Houses, in addition to the typical side dishes, the meat is served also with creamed corn, Creamed Spinach, asparagus and the famous mac and cheese (Macaroni and cheese).

Sauces

Characteristic of the American barbecue is to serve meat with sauces. The BBQ is arguably the most famous. It is made with a blend of sweet and acidic ingredients, which ships with all kinds of meat, especially pork. According to Frenkel, sauce recipes vary from region to region and from restaurant to restaurant.

Barbecue

There are many the differences between the Brazilian and the American barbecue, starting with the type of equipment used to cook the meat. In Brazil, the coal barbecues are traditional. With the help of grids or skewers, cuts like rump, sirloin, tenderloin, lamb, sausage and Gammon will fire and are served with mayonnaise, chutney, tomato and onion vinaigrette and horse bean.

In the United States, says Frenkel, can hardly see charcoal grills. There is quite common to find roast beef in gas-powered equipment, wood or mixed. The Americans often use firewood of cinnamon and Apple tree to prepare food, because the burning those timbers aromatize the meat. “In addition, the wood generates hot hotter as it is the result of the first wood-burning” explains Frenkel.
